soybean
Glycine max, a legume native to China that is a major source of vegetable protein and oil for human and animal consumption and for industrial usage. Introduced into North America in 1765, soybeans were first grown as a curiosity and then as a forage and soil-building crop. The valued portion of the plant is the seed, which contains about 40% protein and 20% oil on a dry-weight basis.
