Pita

Pita is a family of yeast-leavened round flatbreads common in the Middle East, Mediterranean and neighboring areas. It is a relatively simple bread, made basically of wheat flour, water, a fat (usually olive oil) and yeast (which also can be substituted for sourdough starter, changing its fermentation time and flavor). It is baked in a very hot surface for a short period of time, due to its very thin shape, and it puffs up very quickly because of the water in the dough, that in contact with the hot surface, turns into steam. It is very similar to Indian Roti in shape, except that this last one does not contain any yeast or leavening agent.
